Human life may be threatened by the growing use of chemicals in food production and domestic insecticides, a peer said last night. Lord Douglas of Barloch was particularly concerned about DDT. Lord Hailsham, Minister of Science, said, “I do not believe that there is any call for concern about the effects of these chemicals on human health.”

Tonight, I'm making Cajun shrimp and linguini. I'm also experimenting with cooking tempeh the same way I cook the shrimp. If it works, I'll be able to cook this for my vegetarian friends.

I've never had tempeh before, so this is an all new world for me, culinary-wise.

Amaranth Leaves are the leaves of the varieties of edible amaranth plants. They are very easy to grow, and come up year after year, so keen gardeners are never without this vegetable in their gardens. The leaves can vary from green to red, and you will often see bunches in Asian green groceries.

The leaves and the grain are exceptionally high in protein as well as amino acids, potassium, calcium, magnesium, iron, manganese, copper, and zinc - a vegetarian's dream plant.

I cook them in Indian dishes, as the leaves are quite common in India so there is a great variety of recipes. Amaranth varieties are used in Asian cooking too. Known as Chinese Sinach or Een choi, it is often sold as whole plants with roots.

More of my favorite buildings around the NC Renaissance Festival. The fourth photo is a Pumpkin Ale by Foothills Brewing, one of my favorites to drink during the autumn season. Make sure you bring cash as the drink vendors do not take credit or debit! Also, make sure you stop by the chimney rolls vendor. There is always a long line, but the chimney rolls are definitely worth it! Plus, it's fun watching the pastries being prepared! Shot in November 2024.
