Robot Diver<p>Equinox strangolapreti chilling in the fridge. Took a bunch of little 5-10 minute steps to get there throughout the day and will probably get a hand from my partner with shaping them, but I'm so happy I made them. </p><p>One of the goals I've set for myself since getting a little better is to try to cook things I've wanted to cook for years or things I dreamed about trying to cook when I was in really rough shape last year. </p><p>These go by a bunch of regional Italian names, and variations, all of which translate to 'priest stranglers' which was a nod to the gluttony of the church, which I think is as good a reason as any to want to cook them. </p><p>The version I made is basically a big spinach bread dumpling, and I will either cook it in brown butter and sage or Parmesan cream, haven't quite decided just yet. I've got another recipe that is more of a giant potato dumpling which I will have to try too. Robot Diver<p>I am an egg snob. This is something i can't deny. I grew up with chickens, I'm fussy about how I prepare them and I used to scoff at microwaved eggs really hard. </p><p>My m.e. hit a new low last year and as a result I kind of changed my feelings around microwaved eggs. I have a hard time eating toast for breakfast. It usually makes me feel like homemade garbage. I also feel gross when I eat cereal. </p><p>I've also learned that you can save a whole lot of spoons by not dirtying pots. So at that point I thought I'd give them a try again.</p><p>I loathe rubbery eggs, it might be an audhd thing, the texture of scrambled eggs that are overheated makes me gag. I will not order scrambled eggs in public ever. </p><p>But, I think i've finally hit a sweet spot with the microwave. It will differ for every microwave based on its power, but for mine I set the power to 70% and do 30 second bursts between scrambling them with a fork.</p><p>It usually takes about 3 bursts to get a nice well cooked but not dry scramble. At first it will seem like this isn't doing anything, but you are cooking the proteins very slowly so it doesn't seize. </p><p>Around the third burst things will start to solidify and the heat from the already cooked parts of the egg will help cook the surrounding softer egg as you mash/beat it.</p><p>I beat my eggs in a small microwavable soup bowl and add a tiny chunk of butter and sometimes veggies etc if i have them.<br>Don't salt your eggs until after cooking them, or they tend to curdle and make a bunch of water. When i want cheese i stir it in before the last 30 seconds. </p><p>This morning it took about 5 mins to make some eggs this way. I topped it with leftover dips from our nachos this weekend and scooped it with tortilla chips. It was great. <br>Maybe a new favourite even. Breakfast layer dip.</p><p>If you accidentally overcook the eggs, bash them up as much as possible and add just the tiniest bit of mayo and beat it in. Robot Diver<p>Every time i move to a new house one of the first things I do is figure out exactly how long and what temp it takes to cook a grilled cheese on the new stove. In spite of years as a professional cook, i am also part adhd gremlin and will burn any grilled sandwich without a timer without fail. I could make you a beef wellington with my eyes closed but the less focus required, the worse I get. I haven't made an edible grilled cheese or quesadilla without a timer in years. Because of my rule, I am currently eating a non-burned grilled cheese. Just extend your baking time. </p><p>Most loaves/quick breads take around 50-70 mins, but paleo recipes may take a little longer due to density and moisture. Toothpick test works for all. </p><p>This drastically shortens on clean up and prep on both ends. You can also break your recipe up into stages. Mix your dry ingredients, then take a rest before you do the wet and bake. </p><p>Hang in there long haulers and tired warriors. Add milk to paste, stirring constantly. Heat on low until piping hot. Or maybe my audhd just likes the caffeine hit. </p><p>Anyways, it's pouring rain today and our whole town smells like a mildew filled tent trailer. Making cocoa mochas to stave off the PNW gray sadness. I use instant coffee I have for baking when I make these sometimes, because it's way quicker, and my friend who is a barista champion says mocha is the best way to hide bad coffee. Lol. Devo :flag_nonbinary: 🪴🌮🥃🍣<p>Making the loveliest squash lasagne to celebrate my partner's transition anniversary.</p><p>I don't cook a lot of meals that require a lot of "spoons" these days, but this one is worth it and a fairly easy thing to break down over a few days. </p><p>You can roast the squash and make most of the fillings a day or two before and the soaking process for the noodles helps cut down on cooking and dishes to clean up. </p><p>This freezes really well too, so we get many delicious meals out of one batch.
